Food Allergies and Intolerances

Food can give Adverse Reactions: Food Allergy and Intolerance can lead to Hypersensitivity reactions affecting susceptible individuals, but are commonly confused. Food Allergy is dependent on an immune mechanism; all the other conditions are Food Intolerance. The Food Allergy recognizes two main and different immune mechanisms: IgE-mediated and Cell-mediated (i.e. Celiac disease). Enzymatic Intolerance relates only to diseases (i.e. lactose intolerance) caused by the absence or severe reduction of digestive enzymes and is a genetically conditioned disease. The treatment of Food Allergy and Intolerance is symptomatic; the prevention is based on exclusion diets of allergenic food.

Course aim
The purpose of this summer school is to investigate the problem of food allergy or intolerance. The lectures will address the topic from different approaches: a); foods containing lactose and gluten; b) differences between allergy and intolerance; c) biomarkers used as diagnostic tools; d) nutritional problem correlated to food allergy and intolerance in adult and pediatric age; e) focus on Celiac disease and non-celiac gluten sensitivity; f) allergenic ingredients and consumer information, legal issues and secure food preparation.
Fee info
EUR 280: It covers tuition, teaching materials and tutoring services. plus 1 ticket and guided visit to EXPO Milan 2015 site. Also includes social and cultural activities program held by Erasmus Student Network Bicocca. Participants are required to provide for the payment of the course only after an e-mail of confirmation sent by the Univeristy of Milano-Bicocca office.
