We are looking for a PhD student who is willing to conduct research on how structural properties of foods can affect metabolism and perceived satiety in humans. Increased satiety is a potential target to prevent over-consumption of food. Over-consumption can lead to overweight and obesity which are key components of many lifestyle diseases and metabolic disorders.

Composition and structure properties of food components such as dietary fiber, starch, fat and proteins are vital to how foods affect blood glucose metabolism and hormone secretion at mealtime as well as perceived satiety. There is great potential to optimize the properties to obtain beneficial health effects. In this research, we will examine how structural properties of different types of dietary fibers, starch fat and proteins in different foods and model food systems affects metabolic parameters and satiety in humans.

The goal is to elucidate which structural characteristics that are most effective and how these can then be used in the production of new healthy foods. This work will be conducted in a research-intensive environment at the new Biocenter at Ultuna campus in Uppsala. This appointment is one of two in the field of foods for satiety. The main focus for this appointment lies in the study of food structure properties. PhD student for 4 years, with scholarship and 20% employment the first year and 100% employment the following years.
